Lemon-Buttermilk Popsicles


After returning from my trip to Nashville last summer and ODing on las Paletas, I went on a kick of trying to make a good popsicle.

I made numerous attempt of making mediocre unsatisfying popsicles until I found this gem of a recipe. Basically I feel that when popsicles are made they flash freeze them because the consistency is quite different. Using a standard freezer, popsicles come out with an icicle. As you lick them the juice comes out and you are left with a plain ice cube. This creamy lemon popsicle has a way better consistency. The recipe calls for buttermilk which when frozen doesn't get quite as hard allowing for great popsicles!

Here is the recipe:
Ingredients:
- 3/4 cup sugar
- 5 tablespoons fresh lemon juice
- 2 tablespoons grated lemon peel
- Pinch of salt
- 1 2/3 cups buttermilk

Directions:
- Whisk sugar, lemon juice, lemon peel, and salt until sugar dissolves.
- Add in buttermilk.
- Pour mixture into 8 ice pop molds
- Cover and freeze until firm
(It is best to have dessert already planned for that night because you will have to wait until the next day or at least 4 hours to enjoy!)

Big Day of Eating!

What better way is there to spend a Sunday then touring around eating lots of delicious food? Alice, Jessie and Nate joined me for this day excursion. To start we stumbled upon a little candy store called, the Sweet Life. I indulged in some marshmallows dipped in chocolate on a stick which were quite yummy. Then it was on the Essex Street Fair which had food vendors galore. Everything looked super amazing. I wish I could have tried even more!

I tried out a risotto ball by Arancini Bros. We sat on the grass and had a risotto ball picnic! I went for the spinach and ricotta. Might have been one of the best things I've ever ate!

Next on the menu was a Mexican popsicle. This was no Las Paletas, but still tasty! I tried something a little different and went for the mango chili flavor. It was different, but quite good.


Next stop was the South Street Seaport, which I had never been to before. It is a really neat area overlooking the water with views of the Brooklyn Bridge and Governor's Island and tons of shops and restaurants. I kinda felt like I was at Faneuil Hall in Boston! The main reason for our visit was to try Soul Daddy finally!

After a day filled with eating I wasn't hungry enough to go with a full meal, so I opted to just try a couple sides.

I tried the braised kale and cornbread waffles, which were both very good. Alice tried the pulled pork sandwich and Jessie and Nate tried the cheese grits. All left pleased and happy!

We also stopped by the Jewish Chinese Festival. Here they had a little station where you could make your own hallah bread! They provided you with a balls of dough which you braided and put in your on personal tin to bring home to bake!

Not the prettiest braids, but tasty none the less!

Las Paletas



The treasure of Nashville.

Las Paletas is a small popsicle shop, which provides the people of Nashville with fresh homemade Mexican popsicles. They are literally the best popsicles I’ve ever had, jam packed with so much flavor. They really hit the spot when you are sitting in steamy 100 degree weather starting to melt away. They are so tasty that I had three while I was in town! I tried berries, kiwi, and creamy lime. They were all amazing and there were even more I just didn’t have time to try.


They have a fruit variety as well as a creamy variety and also some out of the norm flavors like avocado, rose petal, and hibiscus. You can find them at their shop and also at many other local restaurants like Fido on 21st Ave!

My friend Adrienne is living the life, eating las paletas daily!
